Put the Lime in the Coconut
When we were in Hawaii I ate this super good macadamia nut crusted chicken with pesto. When we got back, I decided to put my own spin on the recipe by using coconut and serving it with pineapple salsa. It won rave reviews from Tone so I thought I would share the recipe so you could have your own taste of Hawaii.
Start by coating thinly pounded chicken breasts in flour, followed by beaten egg, and then coat in a mixture of Panko breadcrumbs, crushed macadamia nuts, and shredded coconut.
Place the chicken in a dish sprayed with Pam and bake at 350 for 45 to 60 minutes depending on how much chicken you used. (Make sure the inside of the chicken reaches 165 degrees before you eat it)
Serve with pineapple salsa and enjoy! I make mine with avocado, red onion, cilantro, and lime.

Lipstick Jungle
Finding the perfect shade of red lipstick is much more of a challenge than one would think. I went to Sephora to get myself some sassy red lips and after trying on about 20 different shades of red I left with a face like Courtney Love and 2 shades I was not too sure of. I wore one to church and decided it was not right. My friend suggested I try MAC. I headed over and the make-up artist set me up with a match made in heaven. Its called Viva Glam 1. I also got the prep and prime and red enriched creme lipliner to avoid future impressions of Courtney Love. I think the lips are perfect parts sassy and sophisticated.

Hello Bloggies
My poor little blog has been a little neglected this summer. I have just been having too much fun to stop and post and I was without a camera for a while and who likes a post with no pictures. So here is what I have been up to this summer:
In between my days of exfoliating I have been doing a lot of wakeboarding. Fortunately, Tone got a little too crazy last time we went and broke the bindings to the little board that I like to use. So me and daddy-o went a picked out a girly board that is the right size for the girls in the family. Here is a pic of daddy-o in action.
We thought we were pretty good but then we got The Book. We got through the first disc and realized we have a long way to go. HAHA but it has become my new favorite past time.
In August we went to Kauai with Tone's family. We had such a good time snorkeling, hiking, swimming, relaxing and hanging out with the familia. Thanks Randy and Syndea!!!
Kauai was definitely the prettiest Hawaiian island I have been to.
In September we celebrated my big 25th birthday- well birthday week :) I went to Glen Ivy, did some shopping, a little wakeboarding, and celebrated with family. It was perfect. I also received one of my most favorite and most used presents
A couture snuggie. This I'm sure was supposed to be a joke but now this is where you can find me every night regardless of the temperature.
I also got to be in the wedding of one of my long time BFFs Ashley.
The bride looked gorgeous, the setting was beautiful, the weather was perfect and the company could not have been better.
She is now an official member of the Anthony Wives Club :)
Now I'm just enjoying the last of my time with Tone before he starts school again and I am a single mom to my bus bus. I'm going to try to be better about updating and taking pictures especially since I can blog now in my snuggie.
